  1. In a small bowl, sprinkle the powdered gelatin over the cold water and let it sit for 5 minutes to bloom.
  2. In a medium saucepan, combine the heavy cream and sugar. Heat over medium heat, stirring, until the sugar is dissolved and the mixture is hot but not boiling.
  3. Remove the saucepan from heat and stir in the vanilla extract.
  4. Stir the bloomed gelatin into the hot cream mixture until fully dissolved.
  5. Pour the mixture into serving glasses or molds, leaving space for toppings.
  6. Refrigerate for at least 4 hours or until set.
  7. Serve chilled, topped with fresh fruit or berry sauce if desired.
